Spring Ginger Mint Tea

Spring Ginger Mint Tea

Yield: 2 servings

Ginger is warming and stimulating, while mint and lemon are refreshing and soothing. This tea is excellent for supporting digestive health. Enjoy it throughout the day all season.

Ingredients

  • 16 oz. of water
  • 2 in. of fresh ginger root, peeled and chopped into 4 pieces
  • 1 lemon slice
  • 10 fresh mint leaves
  • Honey (optional)

Instructions

  1. Place water, ginger root pieces, and lemon slices in a saucepan and bring to a boil. Reduce to a simmer, cover, and let simmer for 20-30 minutes.
  2. Turn heat off, but leave the saucepan on the hot burner. Add the mint leaves, cover again, and let the leaves infuse for 10-20 minutes.
  3. Strain hot tea into a large mug or mason jar. Stir in honey to sweeten if desired. Drink throughout the day.
