This yummy cold soup is summer in a bowl! Green Goddess Gazpacho hits the spot like nothing else on a hot summer day, and the only thing you need to turn on in the kitchen is the blender. Switch up the produce and herbs to make it your own or to use up whatever’s thriving in your garden.

What is gazpacho?

Gazpacho is a traditional Spanish dish that originated in the southern region of Andalusia. It’s a refreshing and chilled soup made primarily from raw vegetables, such as tomatoes, cucumbers, bell peppers, and onions. Typically, gazpacho is red in color and is made with ripe tomatoes as the base.

However, green gazpacho puts a twist on the classic recipe by replacing the red tomatoes with green ingredients like green tomatoes or tomatillos. This gives the soup a vibrant green hue and a unique flavor profile. Green gazpacho is perfect for those who prefer a lighter and tangier version of the soup.

The soup is typically flavored with garlic, olive oil, vinegar, and salt. These simple ingredients not only add a delicious taste to the gazpacho but also enhance its nutritional value. It is packed with vitamins, minerals, and antioxidants, making it a healthy choice for a summer meal.

Green gazpacho also offers endless possibilities for customization. You can experiment with different herbs and spices to add your own twist to the recipe. Some popular additions include cilantro, basil, mint, or parsley, which give the soup an extra burst of freshness.

Red vs. Green Gazpacho

It’s a great option for those looking for a lighter and more refreshing soup experience. Ultimately, whether you prefer red or green gazpacho comes down to your taste preferences. Why not try both and see which one you like best?

How To Make Green Gazpacho

  1. Gather and prep your ingredients: avocado, cucumbers, lemon juice, basil, cilantro, dill, garlic cloves, sea salt, black pepper, jalapeno pepper, and water. Customize with whatever you have available. Try green tomatoes, mint, lime juice, a handful of baby spinach, green pepper, fresh parsley, or even green apple or green grapes.
  1. Place all the ingredients in a high-speed blender and puree until smooth. Add more water if you prefer a thinner soup.
  1. Taste the gazpacho and adjust the seasoning as needed.
  1. Chill the soup before serving.
  1. Garnish the green gazpacho with avocado slices, microgreens, seeds, dukkah, radishes, thinly sliced beets or cucumbers, cubed peaches, red onion, olive oil, chili flakes, croutons, crusty bread… whatever you fancy!

Green Goddess Gazpacho

Summer in a bowl! This Green Goddess Gazpacho is refreshing, nourishing, and hits the spot on a hot summer day.

Ingredients

  • 2 Cucumber, peeled and sliced into ½ inch chunks
  • 1 Avocado, pitted and skin removed
  • 1 clove garlic, peeled
  • 1 Jalapeno, stem and seeds removed
  • ½ cup fresh basil, stems removed
  • ½ cup fresh cilantro, stems removed
  • ¼ cup fresh dill, stems removed
  • Juice of 1 lemon or lime
  • 1 tsp. salt
  • ½ tsp. pepper
  • ½ to 1 cup water

Instructions

  1. Reserve 1 tbsp each of cucumber, avocado, jalapeno, and herbs for garnish (if desired).
  2. In a blender, combine all ingredients and blend until smooth and creamy.
  3. Top with reserved produce, and croutons if desired.
